Sweet Potato Brownies



Alright, so we all have that health conscious family member or friend who refuses to eat anything that comes in a prepackaged container.  If you want to wow them with a healthy treat, I would definitely suggest making these brownies!  This recipe serves up to twenty people!


1 medium sized sweet potato
3 eggs
1⁄3 cup of coconut oil
1⁄2 cup of honey
1 1⁄2 teaspoons of vanilla extract
2⁄3 cup of raw cacao powder
1⁄2 teaspoon of sea salt
1 teaspoon of baking powder
1 cup of dark chocolate chips
1⁄2 cup of coconut milk

(The unfamiliar ingredients, like cacao powder can be found at your local Trader Joe’s or Whole Foods!)


  • Preheat the oven to 350 degrees
  • Cover a baking pan with olive oil spray
  • Remove the skin and bake the sweet potato
  • Put the sweet potato skin, eggs, coconut oil, honey, and vanilla extract in a food processor and wait until the ingredients have completely mixed together and gotten smooth.Pour the flour, cacao powder, salt, and baking powder into a bowl
  • Add the ingredients from the food processor
  • Stir the mixture until it is completely smooth and combined
  • Pour the batter into the baking pan
  • Cook for 15 to 20 minutes
  • Once fully cooked, take the brownies out of the oven and let them cool
  • Pour the chocolate chips and half (so that’s 1⁄4) of the coconut milk into a microwavable bowl
  • Cook this mixture in the microwave for 45 seconds
  • Take the mixture out and combine the rest (the other 1⁄4) coconut milk
  • Let sit until this mixture has a become a frosting texture
  • Cut up the brownies into 20 pieces
  • Frost each individual brownie
  • Now you have a delicious and healthy snack to share with everyone!
